First Lady Maria Shriver is truly an extraordinary woman. Married to the Governor of California and mother to four children, she is also a former television network anchor and a New Y
ork Times best-selling author.
Now, as First Lady of California, she has fully immersed herself in her role and shown great initiative with a can-do attitude, describing herself as a “General Assignment First Lady.”
Ms. Shriver has embraced such issues as Alzheimer’s disease, people living with disabilities, supporting military families, disaster preparedness, extolling the accomplishments of women, and promoting culture, art and history throughout the State of California.
The First Lady is the Honorary Chair of the Governor and First Lady’s Conference on Women. She transformed the program into one of the nation’s largest and most successful one-day women’s conferences. She also developed “Volunteer Village," uniting non-profits in an effort to connect them with the women of California. And she created the Minerva Awards (named after the Goddess Minerva on the California State Seal), given annually to highlight the extraordinary achievements of California women.
To quote the First Lady, “California Women are trailblazers in everything they do. They’ve made history by doing things their way. They didn’t wait to be asked. They didn’t wait to be invited. And they didn’t wait to be told! They just did. I love people who just do.”
First Lady Maria Shriver is truly a trailblazer, and we are honored to have received one of her favorite recipes that she might enjoy with a wonderful cup of tea. Being nutritionally conscious, she did not send us a recipe for the typical treat associated with Afternoon Tea. But this is one that we are proud to pass along to you, our readers.

California First Lady Maria Shriver’s
Oriental Chicken Salad
(Schatzi Recipe, in Famous Friends of the Wolf Cookbook)
To prepare chicken: Combine all marinade ingredients in a baking dish. Add salt and black pepper to taste. Place chicken breasts in the dish and refrigerate, preferably overnight.
2 lb. boneless chicken breasts
1/4-1/2 lb. mixed lettuce greens
1 head iceberg lettuce
1 bunch watercress, tops only
1 bunch cilantro
1 bunch mint, leaves only
1 large carrot
1 small cucumber
2 large oranges
Marinade for Chicken
1 cup low sodium soy sauce
3 oz. green onions, chopped
1-1/2 oz. ginger, peeled and julienned
2-3 oz. dark sesame oil
Salt & pepper to taste
Sesame Rice Wine Vinaigrette
1 cup rice wine vinegar
1/2 cup peanut oil
1/2 cup sugar, or to taste
2 tablespoons dark sesame oil
1 tablespoon low sodium soy sauce
Salt & pepper to taste
1/2 teaspoon crushed red chile pepper
1/2 cup toasted slivered almonds
Pinch pickled ginger
Fried wonton skins for garnish
Preheat oven to 350°. Pour off and discard marinade. Bake chicken, skin side up, for 30 minutes, or until cooked through. Cool and remove skin. Shred skin.
To prepare salad: Clean lettuces, spin dry and chill for crispness. Mix watercress, mint and cilantro with lettuce. Peel and julienne the carrot and cucumber. Peel and segment the oranges.
To prepare vinaigrette: Whisk all ingredients together in a bowl.
To assemble salad: Place all ingredients, except wonton skins, in a large mixing bowl. Dress lightly with vinaigrette and toss gently. Add more dressing as required. Garnish with crumbled wonton skins.
Serves 4.
