          "Prime Minister Tony Blair's Sweet Tooth"


      Who would have guessed that Prime Minister Tony Blair has a sweet tooth.  And especially one for chocolate.  Well, he does and when he has a moment to spare from his hectic schedule, he treats himself to a cup of tea and a slice of his favorite Chocolate Sponge Cake.  
      Aside from his culinary preferences, the Prime Minister's political side debuted in his civic career at the age of 30 when he successfully won the seat of Sedgefield in the 1983 General Election. After the 1992 election, Labour’s new leader promoted Mr. Blair to Shadow Home Secretary. 
      Continuing his political rise, at the age of 43, the charismatic Mr. Blair became the youngest Prime Minister of England since Lord Liverpool in 1812. He went on to win a second term where he was faced with the new and deadly serious problem of terrorism.  
      Now, in his third term, he has declared that, “respect in our schools, our communities and our villages” will play a big part of his agenda. 
      Prime Minister Blair lives at Ten Downing Street in London, England with his wife and four children.  His youngest child is the first child born to a serving Prime Minister in over 150 years.     
      Mr. Blair was most gracious in providing High-SocieTea with one of his favored sweet treat recipes. 
      All-in-One Chocolate Sponge Cake is a two-layer chocolate cake with a center of jam, lemon curd and/or fresh cream.

                      All-in-One Chocolate Sponge Cake
     
     

110 g (1 cup) self-rising flour (sifted)
1 teaspoon baking powder
110 g (1 stick) softened margarine
110 g (1/2 cup) caster sugar (fine sugar)
2 large eggs
1 tablespoon cocoa powder
      Preheat oven to 325°. Lightly grease two 18cm (7") sponge tins, no less than 4cm (1-1/2”) deep, and line with parchment paper. 
      In a large mixing bowl, sift flour and baking powder, holding the sieve high to give the flour a good airing.  
      Whisk in all other ingredients until thoroughly combined. 
      NOTE: If the mixture does not drop off a wooden spoon easily when tapped on the side of the bowl, then add 1 or 2 teaspoons of warm water and whisk again. 
      Divide the mixture between the two prepared tins. Level off and bake on the center rack for about 30 minutes. When cooked, leave them in the tins for only about 30 seconds, then loosen the edges by sliding a palette knife all round and turn them out onto a wire cooling rack. Peel off the parchment paper carefully. 
      When cool, sandwich the two layers together with jam or lemon curd (or jam and fresh cream), and dust with icing (powdered) sugar.
