        "Bourbon Street Blues . . . Oohs and Aahs"


      We are always looking for unique gifts to give at the Holidays that will delight the recipient. If you make a batch of this Cranberry Bourbon Relish, you will be everyone’s favorite. And, you can make some for yourself to serve on your own Afternoon Tea table. It makes a tea-licious topping for ice cream or pound cake.

 

1-2/3 cups sugar (Splenda
   
can be substituted)
1 orange
1 lemon
5 cups fresh cranberries
1 cup raisins
3/4 cup Bourbon whiskey


     Place 1/3 cup of the sugar in a food processor bowl and add the zests from the orange and lemon. Process until the zests are finely chopped. Reserve the liquid from the orange and lemon.
     In
a medium-sized saucepan, combine the sugar mixture, orange and lemon juice squeezed from the fruit, the remaining sugar, cranberries, raisins and bourbon. Let the mixture stand for about an hour, stirring occasionally.
    
Bring the mixture to boil over medium heat. Lower the heat and simmer for 5-10 minutes, or until some of the berries have popped open.
    
Remove the pan from the heat and let the relish cool. Pour the relish into sterilized glass jars and seal with the lids. Refrigerate the relish until cold. 

    
When you are ready to give this Cranberry Bourbon Relish as a gift, decorate the jars with strands of ribbon or raffia tied around the necks of the jars. You can add decorative touches like berries or small ornaments, or even dangling crystals.
