Jar Ingredients (For 2 Jars):

Lemon Tea Bread Mix in a Jar
You will need two 1-quart glass food storage jars for this Lemon Tea Bread mix.
3-1/3 cups flour
1-1/2 cups sugar
4-1/2 teaspoons poppy seeds
1 tablespoon baking powder
3/4 teaspoon salt
1 teaspoon baking soda
3/4 teaspoon ground nutmeg
Remaining Ingredients
(For 1 Jar):
1 egg
3/4 cup milk
1/4 cup cooking oil
1 teaspoon freshly grated
lemon peel
1 tablespoon fresh squeezed
lemon juice
Drizzled Icing (For 1 Jar):
1/2 cup sifted powdered sugar
1/2 teaspoon freshly grated
lemon peel
2-3 teaspoons fresh squeezed
lemon juice
In a large bowl, combine flour, sugar, poppy seeds, baking powder, salt, baking soda and nutmeg.
Divide the flour mixture between the two glass jars and seal each jar. Decorate the jars with pretty fabric and ribbons, or however you would like, and be sure to attach a card with the baking instructions.
The contents of each jar will make two 6"x3"x2" loaves (small loaves) or one 8"x4"x2" loaf (large loaf). The jars can be stored in a cool, dry place for up to one month.
Preheat oven to 350 degrees. Grease the bottom and 1/2" up the sides of two small loaf pans or one large loaf pan. Empty the contents of one jar into a medium bowl and make a well in the center of the flour mixture.
In a small bowl, stir together the egg, milk, cooking oil, grated lemon peel and lemon juice. Add this egg mixture all at once to the flour mixture. Stir just until moistened (batter should be lumpy).
Spoon the batter into the prepared pan(s). Bake at 350 degrees for 30-35 minutes for the two small loaf pans, or 45-50 minutes for the large loaf pan, or until a toothpick inserted in the center comes out clean. Cool in the pan(s) on a wire rack for 10 minutes. Remove the loaf (loaves) from the pan(s) and cool completely.
Just before serving, combine the sifted powdered sugar, grated lemon peel and lemon juice to make an icing of drizzling consistency. Drizzle over the loaf (loaves) and garnish with lemon peel strips.
