Mulling Spice Bundles
You can almost feel the nip in the air already as Fall is fast approaching. One way to warm your body and soul is by brewing a pot of Mulled Cider to serve along with your favorite tea selection for a new twist on an Afternoon Tea gathering. You can also prepare several Spice Bundles to give as party favors to your guests. They will love simmering their own warming drinks when they get home.
3 cinnamon sticks
3 teaspoons whole allspice
3 teaspoons whole cloves
4 star anise
3 strips dried orange peel
3 cardamom pods
Cheese cloth
Kitchen string
In a large bowl, place the cinnamon sticks (break them in half), allspice, cloves, star anise, dried orange peel and cardamom pods. Toss together to mix them up.
Cut out 6" squares of the cheese cloth. Spoon some of the spice mixture onto the center of the cheese cloth, making sure that you have scooped up some of each of the spices.
Gather up the corners of the cheese cloth and form a bundle. Tie the bundle together with kitchen string, leaving enough length to tie the bundle onto the handle of a pot.
In a medium sized pot, combine 2 quarts of cider (or cranberry juice, or light red wine) with 1 spice bundle and 1 thinly sliced orange. Place over low heat and slowly bring the mixture to just below a simmer. Continue heating the mixture at this temperature for 20 minutes to blend the flavors.
Remove the spice bundle and ladle into mugs. Serve warm.
For this Mulled Cider recipe, cider, cranberry juice or light red wine may be used individually or combined for a new flavor sensation.
