                        "Banana Americana"

     What is more American than good old fashioned Banana Muffins. And, when these miniature versions add only 90 calories to your daily diet, you will really want to stand up and shout "Hooray for America!" So set out a plate of these mouth-watering muffins on your Afternoon Tea table and pledge allegiance to a great tradition.

  

2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup light butter,
     softened
1/3 cup Splenda
1/3 cup Splenda brown
     sugar,
packed
1-1/2 teaspoons vanilla
3 medium ripe bananas,
     mashed
1 large egg


     Preheat oven to 350E. Spray 48 miniature muffin cups with cooking spray.
    
In a medium bowl, combine flour, baking powder and salt.
    
In the large bowl of an electric mixer, combine butter, Splenda sugar, Splenda brown sugar and vanilla; beat at medium speed until creamy.
    
Beat in bananas and egg. Gradually mix in flour mixture.
    
Spoon the batter into the prepared muffin tins, filling each cup about 2/3 full. Bake 15-20 minutes or until a wooden pick inserted in centers comes out clean. Cool for 10 minutes in the pans, then remove muffins and finish cooling on wire rack. Makes 48 servings.
