"Coco-Licious Cookies" Who doesn’t like coconut? And, when it’s paired with cinnamon, your taste buds will go "Coco Loco!" These Cinnamon Coconut cookies are not only a snap to make, but at less than 60 calories each, you can eat them like "crazy!"
1/2 cup unsalted butter,
softened
1-1/2 cups Splenda sugar
4 egg yolks
2 tablespoons skim milk
3 teaspoons vanilla
1-1/2 cups flour, sifted
1/2 teaspoon baking powder 1/4 teaspoon salt
1/2 cup unsweetened
coconut
(or 1/2 cup finely
chopped pecans)
2 teaspoons cinnamon
Preheat oven to 400 degrees F.
In a large bowl, cream the butter and sugar together with an electric mixer until fluffy.
Add the yolks, milk and vanilla. Mix thoroughly.
Add the flour, baking powder and salt. Mix thoroughly.
Form the dough into a ball, cover and refrigerate for an hour.
Place the coconut into the bowl of a food processor and pulse until chopped finely. In a small bowl, stir together the coconut (or pecans) and cinnamon.
Form the cookie dough into small balls and roll in the coconut-cinnamon mixture. Place on a baking sheet with plenty of space between each cookie. Bake for 12-15 minutes. Let cool for 10 minutes, then transfer to a rack to cool completely. Makes about 4 dozen.
Put a plate of these little darlin’s on your Afternoon Tea table along with a large pot of Stash’s Sweet Cinnamon tea. Your guests will go berserk for more!
