"What's What with Coconut"
Everyone loves the little "one-bite" sweet treats that are served at Afternoon Tea. But, you will be willing to climb a palm tree yourself to make these Mini Coconut Tarts when you find out that they are only about 80 calories each.

1/4 cup Splenda
3/4 cup flour
2-1/2 teaspoons vanilla
extract
2 egg whites
1 small package lemon
pudding mix
2 cups skim milk
1 (8 oz.) tub fat-free
whipped topping
Preheat oven to 400E. Lightly grease 24 mini muffin tins.
In a medium bowl, combine the coconut, Splenda, flour, vanilla and egg whites. Stir well.
Spoon the mixture into the muffin tins, dividing evenly between them. Press the mixture down into the bottom and up the sides of the cups, forming a shell.
Bake the cups for 20 minutes or until the edges are lightly browned. Remove from the oven and cool for a few minutes in the muffin tins. Remove the shells from the tins and finish cooling on a wire rack.
In a medium bowl, whisk together the pudding mix and skim milk. Spoon the mixture into each of the coconut shells and top with a tablespoon of the whipped topping. Makes 24 mini tarts.
Prepare a double batch of these delicious Mini Coconut Tarts, brew a pot of Bigelow’s Lemon Lift tea, and invite all of your friends over for an "Island Tea Party." Play some reggae music, and you will be limber enough to dance the limbo thanks to your low calorie buffet.
