                          " Skinny Dippin' "


     As decadent as a midnight "skinny dip" in the pool, savoring these Chocolate-Dipped Cookies with a tea-licious cup of tea will set the perfect mood for anyone. Made with pre-packaged cookie dough, they are as easy to do as a lazy backstroke and just about as healthy at only 80 calories each.

  

1 roll (16 oz.) sugar cookie 
     dough
1/4 cup flour
1/2 cup finely chopped
     almonds
(or pecans)
6 oz. milk chocolate,
     chopped
(or semisweet 
     or white
chocolate)
1/2 teaspoon vegetable
     shortening
1/3 cup finely chopped
     almonds 
(or pecans)


     Preheat oven to 350E. On a floured surface, knead the flour into the packaged cookie dough. Knead in the 1/2 cup of almonds (or pecans).
    
Using a tablespoon measuring spoon, scoop up balls of dough and roll them into 2" logs. Place them about 1" apart on ungreased baking sheets and bake for 12 minutes. Let cool on the baking sheets for about one minute, then remove to a wire rack to cool.
    
Put the chocolate and shortening into a bowl and microwave for about 1-1/2 minutes on High. Stir until smooth. Microwave longer if necessary. Let cool for a minute or two.
    
Dip the ends of each cookie into the melted chocolate and place on a waxed paper-lined baking sheet. Sprinkle with the remaining almonds (or pecans) and let the chocolate set and harden before serving or storing.   Makes about 48 cookies.
