                        "Dainty Lady Fingers"
 

     Just the name Lady Fingers conjures up a delicate, long and slender vision. And these Lady Fingers are no exception. These gossamer light cookies will melt in your mouth and satisfy the most discerning taste buds. And, they are so low in calories, that you can serve them guilt-free. So bake up a three-tiered serving and set them out proudly on your Afternoon Tea table. You will earn a whole new level of respect and admiration from your favorite Afternoon Tea afficionados. 

  

Cornstarch
3/4 cup plus 1 teaspoon
    sifted
all purpose flour
Dash of salt
2/3 cup sugar (can
    substitute Splenda
for
    even less calories)
4 eggs, separated
1 teaspoon vanilla


     Preheat oven to 350E. Grease two baking sheets, then dust with cornstarch.
     Sift flour with salt and 1/3 cup of sugar; set aside.
     In a large bowl with an electric mixer, beat egg whites until they hold stiff peaks, then gradually beat in remaining 1/3 cup sugar, 1 tablespoon at a time.
     In a small bowl with an electric mixer, beat egg yolks with vanilla until thick and lemon-colored. Fold yolk mixture into egg white mixture. Sift flour mixture over egg mixture and carefully fold in.
     Spoon the batter into a pastry bag fitted with a plain tip (size #7). Pipe the batter onto the prepared baking sheets, forming "fingers" about 1" wide and 4" long. Space each "finger" about 1" apart. (You can carefully spoon the mixture onto the baking sheets to form the same shape.)
     Bake the Lady Fingers for about 9-10 minutes until lightly browned. Remove and let cool on the baking sheets for about a minute, then transfer to racks and let cool completely. Store in airtight containers. Makes 2-1/2 dozen Lady Fingers.
