     Whether it’s the holidays or any day of the week, you will be able to eat a bucketful of these Glazed Mint Cookies and not fret over a bulging waistline. Made with crushed peppermint candies, they are a perfect addition to your holiday Afternoon Tea table. Even Santa won’t be able to resist grabbing some of these for the ride back to the North Pole.

  

1 package (16 oz.) sugar
     cookie dough
3/4 cup finely crushed
     peppermint candies
1/2 teaspoon mint extract
3/4 cup flour
3/4 cup confectioners’ sugar


     Preheat oven to 350E. Line two baking sheets with nonstick aluminum foil.
    
In a large bowl, knead together the cookie dough, 1/2 cup of crushed peppermint candies, mint extract and flour.
    
Using a teaspoon measuring spoon, scoop up balls of dough and roll them into 5" logs. Place on the baking sheets about 1" apart.
    
Bake for about 7 minutes, just until the cookies have puffed up and are beginning to turn golden brown. Remove the cookies to a wire rack and cool completely.
    
To prepare the Glaze, in a small bowl stir 4 teaspoons of water into the confectioners’ sugar until it forms a smooth spreadable texture. Dip the cookies halfway into the glaze, then roll them in the remaining crushed peppermint candies. Set them back on the foil-lined baking sheets to dry. Makes about 60 cookies.
