                           "Buy Low Phyllo"

     Packaged Phyllo dough is a great gift to home bakers. It’s easy to work with, and the variety of treats you can make using these tissue paper thin sheets is limited only by your imagination. This recipe is for Phyllo cups that you prepare in muffin tins. You can prepare these impressive looking treats that will have your guests asking, "Do you cater?"

  

1 box Phyllo dough sheets
Cinnamon sugar (can be
    made with Splenda to 
    save even more calories)
Non-fat cooking spray

Optional Fillings:
Strawberries & fat-free
    whipped cream
Blueberries & fat-free
    whipped cream
Raspberries & fat-free
    whipped cream
Fat-free vanilla or chocolate
    pudding & fat-free
    whipped cream
Fat-free ice cream &
    sugar-free
chocolate
    syrup
Smoked salmon & fat-free
    sour cream
Sauteed mushrooms
    in brandy


      The Phyllo dough we used is Athens brand and comes in a box of 40 sheets measuring 9" x 14". For this recipe, you will need as many Phyllo sheets as you wish to make cups.
     For each cup, place one Phyllo dough sheet on your work surface. Spray one side of the sheet with non-fat cooking spray and sprinkle cinnamon sugar on top.
     To keep these treats low in calories, you can make your own cinnamon sugar. Simply mix equal parts cinnamon and Splenda artificial sweetener in a jar. It tastes as good as regular cinnamon sugar, but with virtually no calories.
     Now you must decide the size of the cups you wish to make. You can use the larger muffin tins that measure 3-1/2" in diameter and 1-1/2" deep, or the smaller version that measures 2-1/2" in diameter and 1" deep.
     If you are using the larger cups, you will fold the Phyllo dough sheet in half vertically, keeping the cinnamon sugar on the inside. This will make a double thickness sheet measuring 9" x 7". If you are using the smaller cups, you will fold the Phyllo dough sheet into quarters, also keeping the cinnamon sugar to the inside. This will make a quadruple thickness sheet measuring 4-1/2" x 7". If you want the larger cups to be quadruple thickness as well, simply prepare another sheet and use two for each cup. If you are a true perfectionist and want to work with square sheets instead of rectangles, just trim off one end so your side measurements match. But, the rectangles work just fine.
     Take the folded Phyllo sheet and gently place it into a muffin cup, pressing it down to take the shape of the round cup. The points of the corners will stand up above the rim.
     Bake the Phyllo dough cups for 8-10 minutes at 400
E or until golden. You can use a toaster oven to save on energy. Remove from the oven and let cool completely.
     These Phyllo dough cups will store in an airtight container in the refrigerator very well. There are endless varieties of sweet and savory treats with which you can fill them. If you are planning on making the savory varieties, simply eliminate the cinnamon sugar when preparing the sheets. Use our suggestions in the box above or use your imagination. They are not only pleasing to the eye and tasty, but you can eat them guilt free because they are very low-calorie treats. No matter what version you decide to prepare, your Afternoon Tea table will be the hit of the neighborhood.
