                           "An Apple a Day"
     

     Your mother always told you, "Eat an apple a day to keep the doctor away." Well, you will love eating apples in these delicious muffins, especially since they cost only pennies to make. And, you can dress them up with peanut butter, marmalade or jam for an even tastier treat. They’re a perfect addition to any Afternoon Tea table.

  

1 box Jiffy Muffin mix
1 Granny Smith apple
1 egg
1/4 cup milk (can use skim
    milk to save calories)


     Prepare the muffin mix following the directions on the box.
     Dice the apple into fine pieces and mix into the muffin batter.
     Pour the batter into 6 large or 12 small muffin cups and bake following the directions on the box.
     You can substitute blueberries, dried cranberries or walnuts for the apple for a different variety of muffin. They can also be baked in a toaster oven, as many of these ovens come with muffin tins to fit the smaller ovens. You will save even more that way by using less energy.
     To freeze these Apple Muffins, wrap each in plastic wrap and place in a zip lock freezer bag. 
    
     The ingredients cost us approximately:
             Jiffy Muffin Mix (yields 6 large muffins) - $.07/large muffin
                                                                               ($.39/box)
            Granny Smith apple - $.18/large muffin ($1.10/apple)
            One large egg - $.01/large muffin ($.75/12 large eggs - 
                                                                   $.06/egg)
            Quarter cup milk (8 cups/ ½ gallon) - $.07/large muffin
                                                                         $2.29/ ½ gallon)

     The approximate cost of one large muffin is $.33. These are real penny-pinching muffins, which all of us could use in these tough financial times.
