"Pennies From Heaven"

     On a cloudy day, you will want to whip up a batch of these Cheese Biscuits to put a little sunshine in your day. The spicy hot cheese flavor will warm you up even when the weather outside is pelting cold rain drops on your windows. Besides, "Don’t you know each cloud contains Pennies from Heaven. So be sure that your umbrella is upside down, because these Pennies from Heaven are for you and me."
 

2 cups grated sharp
   
Cheddar cheese
1 stick unsalted butter,
   
cut into pieces
1-1/2 cups flour
1/2 teaspoon salt
1/2 teaspoon dry mustard
1/4 teaspoon cayenne pepper
2 tablespoons water
   
(if necessary)
Paprika

     Preheat oven to 400 degrees. In a medium bowl, with an electric mixer combine cheese, butter, flour, salt, mustard and cayenne pepper until a dough forms. If necessary, sprinkle about 2 tablespoons of water, a little at a time, to help bring the dough together.
    
Transfer the ball of dough onto a lightly floured surface. Shape it into a 16" log, about 1-1/2" in diameter. Wrap the dough log in plastic wrap and chill in the freezer for 30 minutes.
    
Using a serrated knife, slice the log into 1/4" thick rounds. Place the rounds on ungreased cookie sheets about 1/2" apart. Sprinkle each with a little Paprika.
    
Bake the Cheese Biscuits for 12-14 minutes or until they just begin to brown. Remove from the oven and cool on the baking sheets for several minutes. Transfer the Biscuits to racks to cool completely. 

     
Sit down next to a window with a plate of these Cheese Pennies and a cup of Twinings’ Lapsang Souchong tea, a strong, golden tea with a very distinctive smoked character. You will be smiling in no time, and instead of watching the weather rage, you will be seeing "Pennies From Heaven" falling outside your windowpanes.
