Homemade chicken pate is not only easy, but impressive to your guests. When served in the form of tea sandwiches, it will be the centerpiece of your Afternoon Tea table. Whip up a quick batch, set out on your buffet table, and sit back and wait for the applause.
Put the diced chicken breasts and heavy cream in a food processor. Blend until smooth. 2 cooked chicken breasts,
skinned, deboned and diced
1/2 cup heavy cream
1 sprig rosemary,
stem removed, leaves chopped
6 slices white or whole wheat bread
Salt and pepper
Stir in the chopped fresh rosemary. Add salt and pepper to taste.
Spread the mixture evenly across the 6 slices of bread. Put the slices together to make 3 large sandwiches. Carefully trim off the crusts.
Cut the 3 large sandwiches into 4 quarters each, either cross-wise or diagonally. Or use a cookie cutter to cut out small uniquely shaped tea sandwiches.
