                   "Loafin' Around with Santa"


     Cranberries and oranges are synonymous with the holiday season. What better way to celebrate than to bake a Cranberry Orange Loaf to share with family and friends. And by using fat-free sour cream and applesauce, this bread becomes a guilt-free decadent sweet treat to serve with afternoon tea.

 

1-3/4 cups flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
3/4 cup fat-free sour cream
2/3 cup sugar (can substitute Splenda)
1/3 cup applesauce
1/3 cup canola oil
3 egg whites
1 tablespoon grated orange zest
3/4 cup sweetened dried cranberries
Confectioners’ sugar (optional)


     Preheat oven to 350E. Coat a loaf baking pan with non-fat cooking spray.
    
Combine flour, baking soda, baking powder and salt.
    
At medium-low speed, beat sour cream, sugar, applesauce, canola oil, egg whites and orange zest with 1/4 cup water until blended.
    
At low speed, beat in flour mixture until combined. Fold in cranberries.
     Pour batter into pan. Bake for 1 hour or until inserted toothpick comes out clean. Cool on rack for 15 minutes and remove from pan. Finish cooling and sprinkle with confectioners’ sugar if desired.
