                      "Crumbly Bumbly Buns"


      Perfect with afternoon tea or brunch, Crumb Buns will fill anyone’s sweet tooth with mouth-watering taste and texture. 

Dough: 
1/4 cup milk 
1/4 cup sugar 
1/3 cup shortening 
1/4 teaspoon salt 
1/4 cup warm water
   (105°-115°)
1 envelope active dry yeast
2 eggs, lightly beaten
2-1/2 cups flour 
2/3 cup pineapple preserves
   (or any flavor you choose)
Topping:
2 cups flour
1 cup light brown sugar,
   packed
1 teaspoon cinnamon 
1/4 teaspoon ground nutmeg
1/8 teaspoon salt
1 cup (2 sticks) unsalted butter
3 tablespoons confectioner’s
   sugar
      Preheat oven to 375°. To prepare the dough, heat milk, sugar, shortening and salt in a small saucepan over medium heat until shortening is melted. Cool to lukewarm. 
      In a large bowl, sprinkle the yeast over the warm water. Let stand about 5 minutes until the yeast proofs and is foamy. Stir to dissolve the yeast. Mix in the lukewarm milk mixture, eggs and 1/2 cup of flour. Stir with a wooden spoon until smooth. Stir in the remaining flour until a dough forms. 
      Turn the dough out onto a floured work surface. Knead 5 minutes or until smooth. Place the dough in a greased bowl, turn to coat and cover to rise in a warm place 1-1/2  - 2 hours. 
      Coat a 13"x9"x2" baking pan with nonstick cooking spray. Punch the dough down and roll it out on a floured surface to an 18"x15" rectangle. Spoon the preserves over the left side of the dough. Fold over the other side to cover the preserves. 
      Place in the prepared baking pan and pat evenly out to the edges. Cover with a clean cloth and let rise in a warm place for 1 hour until doubled. 

      To prepare the topping, whisk flour, sugar, cinnamon, nutmeg and salt in a bowl. Melt the 2 sticks of butter and stir it in until the mixture is crumbly. Crumble the topping evenly over the dough. 
      Bake at 375° for 30 minutes until a knife inserted in the center comes out clean. Cool in the pan on a rack for 30 minutes. Slice into squares and serve dusted with confectioner’s sugar. Serves 16.
