                      "Down and Derby Pie"


      You will run for the roses yourself to get a piece of this pie at the finish line. Traditional southern pecans make this the odds on favorite to win your taste buds. So hoof it into the kitchen and get busy in “Your Old Kentucky Home” baking this winner of a pie! 

3 large eggs
1 cup light corn syrup
1/2 cup sugar
1/2 stick unsalted butter,
   melted
1-1/2 teaspoons vanilla extract 1 cup pecan halves,
   coarsely chopped
3/4 cup semisweet chocolate
   chunks
9" frozen deep-dish pie shell,
   unthawed
      Preheat oven to 350°. In a large bowl, whisk together the eggs, corn syrup, sugar, butter and vanilla. Stir in pecans. 
      Sprinkle the chocolate chunks over the bottom of the pie crust. Pour the pecan mixture on top. 
      Bake for 50-55 minutes. The pie will be done when a knife inserted down in the center comes out with little bits of filling on it. 
      If the crust is browning too fast, cover the edges with strips of aluminum foil to prevent burning. 
      Remove from the oven and cook on a rack for 2 hours. Refrigerate until read to serve. 
      For a special added topping, serve with a scoop of vanilla ice cream or a dollop of whipped cream.
