   "Through the Looking Glass with Eat-Me Cakes"


      You, too, can go on an adventure through the looking glass with Alice in Wonderland if you make these darling little Eat-Me Cakes. There’s no guarantee, however, that you’ll grow larger or smaller. But, these sweet and lemony madeleine-like cakes will charm even your grown up guests. 

1/2 cup sugar
2 egg yolks
1/2 cup unsalted butter,
    melted
1 teaspoon zested lemon peel
1 tablespoon lemon juice
1/2 cup self-rising flour
2 slightly beaten egg whites
Confectioner’s sugar
      Preheat oven to 375°. Grease and flour (24) 3" madeleine molds. 
      In a medium mixing bowl with an electric mixer on medium to high speed, beat sugar and egg yolks until thoroughly mixed, about 30 seconds. Add melted butter, lemon zest and lemon juice. Beat on low speed until combined. 
      Sift 1/4 of the self-rising flour over the egg-yolk mixture. Gently fold in the flour. Fold in the remaining flour by fourths. Stir in the slightly beaten egg whites until combined. 
      Spoon the batter into the prepared molds, filling each about half full. Bake for 10-12 minutes or until the edges are golden and the tops spring back when lightly touched. 
      Cool cakes in the molds for 1 minute. Use a knife to loosen the cakes from the molds; invert cakes onto a wire rack to cool. Sift confectioner’s sugar over cakes just before serving. Makes 24 cakes. 
      These cakes can be made ahead of time and stored for one day in a covered airtight container at room temperature, or they can be frozen for up to 6 months. To serve, thaw if frozen and sprinkle with confectioner’s sugar. 

      To be true to the story of Alice in Wonderland, you would serve a beverage in bottles marked “Drink Me.” But a good substitute for your Afternoon Tea guests would be to brew a pot of Twinings Lemon and Ginger tea served in pretty china teacups. This variety is an herbal tea blended with zesty lemon and soothing ginger flavours which has a pleasing lemon flavor without the typical lemon tartness. So go on an adventure through your own looking glass and bring back some favorite childhood memories.
