"Where the Art and Elegance of Taking Tea is Treasured"
There’s an old Chinese proverb that states, "A good fortune may forebode bad luck, which may in turn disguise a good fortune." Well, there’s no disguising these delicious giant Fortune Cookies. They’re so simple to make, and you can fill them with your own personal messages of good luck and well wishes.
Cookie Dough:
"Your Fortune Awaits"
2/3 cup flour
1/2 cup sugar
1 tablespoon cornstarch
3 egg whites
6 tablespoons butter, melted
and cooled
3/4 teaspoon almond extract
Decorations:
1 cup sweetened chocolate
chips or candy melts
2 teaspoons Canola oil
Sprinkles
Candy decorations
Fortune Messages:
Strips of paper, 5-1/2" long
by 3/16" wide
Permanent Marker
To prepare the fortunes that will go inside these cookies, using a permanent marker write sayings of good luck and well wishes on the strips of pre-cut paper.
To prepare the cookies, preheat oven to 350 degrees. Generously coat baking sheets with non-stick cooking spray.
In a medium-sized bowl, whisk together flour, sugar, cornstarch, egg whites, butter and almond extract.
Making two cookies at a time, drop 2 heaping tablespoonfuls of batter onto the prepared baking sheet, about 7" apart. Using a spatula, spread the batter to form 5" rounds.
Bake the cookies 9-10 minutes until the edges are just lightly browned.
Holding a kitchen towel to protect your hand, flip one of the cookies onto the towel using a large spatula. Working quickly while the cookie is still hot, place a fortune strip across the center of the cookie and loosely fold the cookie over in half forming a crescent shape. Don’t crease the cookie at the fold, however. If the cookie has cooled at this point, place it back in the oven for a minute to soften again.
Then, immediately bend in the outer corners of the cookie to form the Fortune Cookie shape. Place the cookie into a muffin cup to cool.
Repeat this process with the remaining cookies while warm.
Serves 8.
To decorate your Fortune Cookies, melt the sweetened chocolate chips or candy melts and stir in the Canola oil. Dip the cookies, one side or end at a time, and place on waxed paper. Sprinkle candy decorations or sprinkles on the melted chocolate or candy melts and let harden. You can also use some of the melted chocolate or candy melts to drizzle decorations onto the cookies.
