                      "Merry Fruity Nut Balls"

     Perfect for the holidays, these sweet morsels will disappear from your table faster than Rudolf from your rooftop on Christmas Eve. And they couldn’t be easier to prepare as they don’t require any baking. So whip up a batch or two or three and munch away. 
 

3/4 cup sugar
1/2 cup dried cranberries
1/2 cup pitted dates, snipped
2 large eggs, beaten
1/3 cup chopped walnuts
1/3 cup chopped pecans
1 teaspoon rum (or extract)
3/4 cup shredded coconut


     In a medium saucepan, combine sugar, cranberries, dates and eggs. Cook over medium-low heat for approximately 6-14 minutes, stirring constantly until the mixture thickens and registers 170E on a candy thermometer.
    
Remove from the heat and stir in walnuts, pecans and rum. Let stand for about 45 minutes until the mixture is cool enough to handle.
    
With damp or lightly oiled hands, form the mixture into 1" balls (use a generous teaspoon to scoop out). Roll each ball in the shredded coconut.
    
Layer the balls in a container, separated with wax paper, and store in the refrigerator. Makes 3 dozen.

     Fill a three-tier server with these bite-sized bundles of Christmas cheer, bring out the good silver and china, and brew up a pot of Stash’s Christmas Morning tea. Even Rudolf might stay awhile, and invite his friends!
