                     "Herbie, the Earl of Sandwich"


     Fresh herbs always make food extra tasty. But when they are mixed with cream cheese and enhanced with lemon juice and hot pepper sauce, they make up very flavorful tea sandwiches. Put these on your next Afternoon Tea table and watch them disappear!
 

8 oz. cream cheese, softened
1-1/4 cups finely chopped
    fresh herbs 
    (any combination of parsley, basil,
    chervil, chives, watercress)
1-1/4 tablespoons fresh lemon juice
Dash hot pepper sauce
8 slices white or pumpernickel bread Paprika

     In a large mixing bowl, combine the softened cream cheese, herbs, lemon juice and hot pepper sauce. Mix well. 
      Spread approximately 2 tablespoons of the mixture on each slice of bread. Sprinkle with paprika. 
      Put the slices together to make 4 sandwiches. Carefully trim off the crusts. 
      At this point you can cut the sandwiches diagonally or cross-wise into quarters, you can cut them into 4 strips each, or you can use a cookie cutter to cut out a special design. 
      For a little variety, you can put thin slices of tomato or cucumber in the center of the sandwiches.
