                "The Thoroughbred of Shortbread"


      The British have mastered the art of serving tea with sweet and savory treats to while away an afternoon. And there is nothing more traditional than tea with English Shortbread Cookies. Here is a very easy recipe for these quintessentially British goodies.

3/4 cup butter, softened
1/4 cup sugar
Scant 2 cups flour
      Preheat oven to 350°. Mix the butter and sugar together. Mix in the flour. If the dough becomes crumbly and dry, add 1-2 teaspoons butter. 
      Roll the dough out on a lightly floured surface to about 1/2”. Using your favorite cookie cutters, cut out about 2 dozen cookies. 
      Place them onto ungreased cookie sheets, spreading them out so they are not too close together. 
      Bake for 20 minutes. Remove from oven and let cool. Makes about 24 cookies.
