            "Spiraling Through Afternoon Tea"
 

     With a whirlwind of end-of-Summer parties being held, you will be the "hostess with the mostess" in your neighborhood when you add these savory Spinach and Leek Puff Pastry Spirals to your Afternoon Tea table. Delightfully light in texture but rich in taste, the combination of spinach and leeks with cheese and fennel will have your guests singing your praises ‘til Christmas.

2 tablespoons butter
1 tablespoon olive oil
3/4 cup chopped fennel
1 cup chopped leek
1/2 teaspoon garlic salt
1/4 teaspoon black pepper
1 10-oz. pkg. frozen chopped
    spinach, thawed and
    squeezed dry
1 8-oz. pkg. cream cheese,
    softened
3/4 cup grated Parmesan cheese
1 pkg. frozen puff pastry sheets,
    thawed

     In a medium saute pan, heat the butter and olive oil over medium heat until melted.
     Add the fennel, leek, garlic salt and pepper. Saute until tender (about 5 minutes).
     Add spinach and saute for another few minutes.
    
Add cream cheese and Parmesan cheese. Stir until melted.
    
Roll out one puff pastry sheet into a 13"x11" rectangle. Spread half of the spinach mixture over the pastry, leaving a 1/2" border.
    
Beginning with the long side, roll up the pastry sheet jellyroll style, making sure that the spinach mixture does not fall out.
    
Repeat this procedure with the remaining puff pastry sheet and spinach mixture.
    
Wrap the puff pastry logs tightly in plastic wrap and chill for 2 hours or up to 2 days.
    
To bake the Spinach and Leek Puff Pastry Spirals, preheat oven to 350 degrees. Lightly grease baking sheets. Cut the logs into 1/4" thick slices. Place the slices on the prepared baking sheets. Bake for 25-30 minutes or until golden brown. Remove from oven and serve warm. Makes about 48 spirals.
