                      "Gone Bananas for Cake"


      When you slice up this beauty of a loaf cake and serve it to your family and friends along with a delicious cup of tea, they will go bananas! This lightened version of Banana Loaf Cake will be the hit of your Afternoon Tea party, especially when your calorie-counting friends and family find out it won’t bulge their waistlines. 
 

1-3/4 cups flour
1-1/4 teaspoons baking powder
3/4 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon ground nutmeg
3/4 cup dark brown sugar
3 ripe bananas, mashed
1 egg
1 egg white
1/2 cup + 1 tablespoon
    low-fat milk
2/3 cup confectioners’ sugar

      Preheat oven to 350°. Coat a loaf pan with cooking spray. 
      In a medium bowl, combine flour, baking powder, baking soda, salt and nutmeg; set aside. 
      In a large bowl, beat the brown sugar and bananas at medium speed until blended. Beat in egg and egg white. 
      At low speed, beat in the flour mixture alternately with 1/2 cup milk until combined. 
      Pour batter into loaf pan. Bake 45 minutes or until pick inserted into center comes out clean. Cool 10 minutes. Remove from pan, and finish cooling on rack. 
      To make a glaze, combine the confectioners’ sugar and 1 tablespoon milk until smooth. Spread over the cake. 

      Slice up generous portions of this deliciously moist cake and serve with a pot of Bigelow’s Vanilla Hazelnut tea. The subtle nutty flavor of the tea will go perfectly with this banana belle of the ball!
