"A Breeze with Brie"
These delicious savory biscuits will complement the grandest of afternoon teas. Brought to life with a variety of herbs, Brie Cheese Biscuits will soon become heartwarming favorites. Make them in miniature for a tasty addition to your tier of treats.
3-1/2 cups all purpose flour
1/2 cup flour mixed with
1-1/2 teaspoons each dried basil,
thyme and rosemary
4 teaspoons heavy cream
2 teaspoons baking soda
1/2 teaspoon salt
1 stick cold, unsalted butter,
cut up into small pieces
4 oz. cold Brie cheese,
cut up into small pieces
1-1/2 cups cold milk
1 large egg mixed with
1 tablespoon water
Preheat oven to 475°. In a large bowl, mix flour, flour/herb mixture, heavy cream, baking soda and salt. Cut in the butter and cheese with a pasty blender or two knives until mixture is crumbly. Stir in cold milk until mixture is moistened.
Turn out the dough onto a floured surface and pat down to 1/2” thick. Using a small, round cookie cutter (about 1-1/2” in diameter), cut out biscuits and place on an ungreased baking sheet. Brush the tops with the egg mixture.
Bake the biscuits for 8 minutes, turn off the oven, leave the door closed, and continue baking for 5 to 10 minutes until golden brown. Serve warm. Yields approximately two dozen biscuits.
