"New Year's Confetti"
You will think these sandwiches were made under the confetti drop in Times Square on New Year’s Eve. Colorful, delectable and delightful, these cream cheese tea sandwiches will make a fanciful and tasty presence on your Afternoon Tea table.
In a large mixing bowl, mix together the chopped eggs, green pepper, red pepper, onion and celery. Salt and pepper to taste.
8 oz. cream cheese, softened
3 hard cooked eggs,
finely chopped
1/4 green pepper,
finely chopped
1/4 red pepper,
finely chopped
1/2 medium onion,
finely chopped
2 stalks celery,
finely chopped
Salt and pepper
8 slices white or
whole wheat bread
Add the softened cream cheese to this mixture and combine well.
Spread the cream cheese mixture evenly across 4 of the slices of bread. Top with the remaining slices.
Carefully cut off the crusts from the 4 sandwiches. Cut each sandwich into 4 tea sandwiches, either diagonally or cross-wise. Or you can cut each of the 4 large sandwiches in half, and then cut each half into 4 strips. You can also use a cookie cutter to make fancy shaped tea sandwiches.
For an alternative taste, you can substitute finely chopped pecans for the celery. Just make sure none of your Afternoon Tea guests have an allergy to nuts.
