              "Carry Me Back to Old Virginia"


      Your heart will be "Carried Back to Old Virginia" when you bite into these Virginia Ham Biscuits. They are a delicate savory treat that you can prepare in no time and serve along with a variety of sweet treats on your Afternoon Tea table. So go ahead, fill up that serving tier and watch these bite-sized goodies disappear. 
 

2 cups self-rising flour
1/2 cup shortening
1/2 cup milk
3/4 lb. Virginia ham, sliced

Optional:
Brown mustard
Pepper jelly
Mayonnaise
Sweet relish
Horseradish
Lettuce
Watercress


     Preheat oven to 425E. Lightly grease a baking sheet.
    
In a medium bowl, add the flour and cut in the shortening until the mixture is crumbly. Add the milk and stir until the ingredients are moist. The dough will be sticky.
    
Turn the dough out onto a floured surface. Roll the dough to 1/2" thickness. Using a round biscuit cutter, cut out approximately 15 biscuits and place them 1/2" apart on the baking sheet.
    
Bake 13-15 minutes until lightly browned.
    
Cut each biscuit in half horizontally and place a slice of ham on the bottom layer. Top the ham with either brown mustard, pepper jelly, mayonnaise, sweet relish or horseradish. Add some lettuce or watercress. Replace the top layer.
