                    "A Real Hanukkah Honey"


      You will want to celebrate lighting the first candle on the menorah with these Hanukkah spiced honey cookies. Sweet and savory all at the same time, you will delight in the flavor explosion these cookies bring to the table. They will help to light up the festivities. 
 

1 stick butter, softened
1/2 cup packed dark
    brown sugar
1/2 cup honey
1 egg
2-1/2 cups all purpose flour
2 teaspoons ground ginger
1 teaspoon baking soda
1-1/4 teaspoons ground
    cinnamon
1-1/4 teaspoons ground nutmeg
1/4 teaspoon salt
1/4 teaspoon ground cloves
Icing:
2 egg whites
3 cups confectioner’s sugar
1 tablespoon lemon juice
1/8 teaspoon salt

      Preheat oven to 350°. In a large bowl with an electric mixer, cream the butter and brown sugar. Beat in the honey and egg until well combined. 
      In a small bowl, mix together the flour, ginger, baking soda, cinnamon, nutmeg, salt and cloves. Add this mixture to the honey mixture in the large bowl. Beat on low speed until well mixed. 
      Cover the dough. Refrigerate at least 1 hour, or up to 3 days. 
      Grease cookie sheets. Working quickly with 1/4 of the dough at a time, roll out the dough on a floured surface to 1/4" thickness. Cut into desired cookie shapes. Using a spatula, carefully lift the cookies and place onto the prepared cookie sheets 1" apart. Re-roll the scraps and cut out more cookies. Continue with the remainder of the dough, working with 1/4 of it at a time. 
      Bake the cookies for 7 minutes or until done. Transfer to wire racks to cool. Makes about 4 dozen cookies. 
      To prepare the Royal icing: In a large bowl, combine egg whites, confectioner’s sugar, lemon juice and salt. Beat on high speed until mixture holds soft peaks. Makes about 2 cups. 
      You can use a variety of cookie cutter shapes to make these treats even more special. Ones shaped like dreidels, menorahs or stars will make your guests ooh and aah! And you can bring them to life by piping on the Royal icing and decorating them with appropriate designs. Divide the icing into two different batches and color one blue. Then decorate the cookies in the traditional blue-and-white theme.
