"Wiggle Jiggles"
Yes, believe it or not, you can now make cookies with that fun wiggly, jiggly mix. Jell-O cookies are easy, tasty and colorful. And, when you substitute different flavors of the gelatin mix in the cookie dough, you will have a plate of multicolored, sweet tasting cookies to serve and enjoy yourself.
3-1/2 cups flour
1 teaspoon baking powder
1-1/2 cups (3 sticks) butter,
softened
1 cup sugar
2 small pkgs. Jell-O
strawberry gelatin, divided
1 egg
1-1/4 teaspoons vanilla
Preheat oven to 400°. In a bowl, mix the flour and baking powder, and set aside.
In a large bowl with an electric mixer, beat the butter on medium speed until creamy. Gradually add the sugar and 1 package of the dry gelatin, beating until light and fluffy.
Add the egg and vanilla; mix well. Gradually add the flour mixture, beating until well blended.
Using a melon baller or teaspoon, scoop out the dough and shape into 1" balls. Place the balls 2" apart on ungreased baking sheets. Flatten the balls into discs with the bottom of a clean glass. Sprinkle the remaining dry gelatin on top of the cookies.
Bake for 8 to 10 minutes until the edges are lightly browned. Remove from baking sheets and cool on wire racks. Store the cookies at room temperature in a covered container. Makes about 5 dozen.
To create a colorful variety of cookies, you can also use lime, orange and cherry flavored Jell-0 gelatin mixes.
