"What's Going On with Lime Chiffon" 2 teaspoons finely grated
In the heated doldrums of summer, we are always looking for a refreshing treat. Well, here is a recipe for Lemon Chiffon Tartlets that will be the "cool jewels" on your Afternoon Tea Table.
lime zest
1/4 cup lime juice
(approx. 2 limes)
2 tablespoons lime flavored
gelatin
1/4 cup cold water
1 cup heavy cream
1 can (14 oz.) sweetened
condensed milk
2 pkgs. miniature graham
crusts (6 per package)
Garnish:
Whipped cream
Thin strips of lime zest
In a small saucepan, combine the lime zest, lime juice, gelatin and cold water. Heat over medium heat, stirring to dissolve the gelatin. Pour the mixture into a large bowl and let cool for 10 minutes.
In the large bowl of an electric mixer, pour the heavy cream and beat until medium-stiff peaks form. Remove from the electric mixer and finish whipping by hand until stiff peaks form.
Add the sweetened condensed milk to the gelatin mixture, and beat until combined. Fold in the whipped heavy cream until combined.
Fill each graham crust shell with the whipped cream gelatin mixture and refrigerate for 2 hours, or until set firm.
Garnish with a dollop of whipped cream and a couple of strips of lime zest.
