"Melt-in-your-Mouth Marshmallows"
Imagine the delight in your children’s eyes to find homemade marshmallows on their buffet tea table. Even more exciting for them would be to help them make their own marshmallows! They’re easy, delicious and a treat for the whole family.
1/3 cup water
2 envelopes unflavored gelatin
1-1/2 cups sugar
1/4 cup water
1/4 cup corn syrup
3/4 teaspoon vanilla extract Confectioner’s sugar
Spray non-stick cooking spray on an 8" square pan. In an electric mixer bowl, dissolve 2 envelopes unflavored gelatin in 1/3 cup water.
In a saucepan, combine 1/4 cup water, 1-1/2 cups sugar and 1/4 cup corn syrup. Stir over medium heat until dissolved. Once dissolved, bring to a boil without stirring.
Pour the hot syrup mixture over the dissolved gelatin in the mixer bowl. Beat the mixture on high until smooth and fluffy
, about 10-15 minutes. Blend in 3/4 teaspoon vanilla extract.
Using a spatula, scrape the marshmallow mixture into the prepared square pan. Smooth out the surface with the spatula. Let the mixture sit until dry to the touch (about 2 hours).
Sprinkle a cutting board with confectioner’s sugar. Invert the pan and drop the marshmallow block onto the cutting board. You can either cut the marshmallows into squares, or use cookie cutters to cut into shapes. Store in an airtight container. Makes 16 (2") marshmallows.
