It’s the beginning of a brand new year when everything seems fresh and exciting. The perfect way to kick off the new year is to invite your friends over for an Afternoon Tea soiree with a winter white theme. And, nothing plays up that theme better than White Chocolate Truffles. They’re a snap to make, with no baking involved, and you can dress up your tea table "to the nines" with these delicious bite-sized balls of good cheer.

1/3 cup heavy cream
2 tablespoons brandy
2 teaspoons rum
1/2 teaspoon nutmeg
1/4 teaspoon cinnamon
16 oz. vanilla flavored candy

In a double boiler, stir together the white chocolate, heavy cream, brandy, rum, nutmeg and cinnamon over high heat. Stir until the chocolate is melted and the mixture is smooth. Cover and place the chocolate mixture in the refrigerator for about 2 hours until firm enough to roll into balls.
Prepare a baking sheet by lining it with parchment paper. Using a teaspoon measuring spoon (or melon baller), scoop out balls of the chocolate mixture and roll in your hands until smooth balls are formed. Place on the baking sheet and refrigerate again for about an hour until firm.
In a small bowl, melt the candy coating for 30 seconds at a time in the microwave (should take about 1-1/2 minutes). Remove the truffles from the refrigerator. Insert a thin skewer or toothpick into the truffles and dip them into the melted vanilla candy coating. Place them back onto the baking sheet and refrigerate to set.
