1/2 cup vegetable shortening
"I'm Just Nutty About Chocolate"
Delicate lacy cookies remind us of an elegant, old-fashioned era when ladies wore hats and gloves to afternoon tea. But these Lacy Pistachio Cookies dipped in white chocolate say "sheer decadence" today. Set them out on a silver tray and your guests will be as impressed as if they were invited to the Vanderbilt’s for tea.
1/2 cup light corn syrup
2/3 cup firmly packed light
brown sugar
1 cup flour
1 cup finely chopped pistachios
1 (16 oz.) pkg. white chocolate
flavored candy coating,
melted
Garnish:
1/4 cup chopped pistachios
Additional chocolate flavored
candy coating
Food coloring
Preheat oven to 375E. Lightly grease baking sheet.
In a medium saucepan over medium heat, combine shortening, corn syrup and brown sugar. Bring to a boil, stirring constantly. Turn off the heat and stir in the flour and pistachios.
Drop the batter by teaspoonfuls 3" apart on the prepared baking sheet. The cookies will spread as they bake.
Bake 5-7 minutes, or until lacy and lightly browned.
Cool for 1 minute on the baking sheet. Working very quickly, wrap the cookies one at a time around a large wooden spoon handle. Remove to wire racks to cool. If you need to, warm the remaining cookies over low heat if necessary to keep them pliable until you are able to form them around the spoon handle.
When cooled, dip half of each cookie in the melted white chocolate coating and place on waxed paper to harden.
To garnish, melt the remaining white chocolate candy coating and add a few drops of food coloring. Drizzle across the white chocolate on the cookies. Or you can sprinkle the remaining pistachios onto the melted chocolate. Or you can garnish with both the colored chocolate and the pistachios.
