    "Down the Rabbit Hole Finger Sandwiches"


      The March Hare would consider these light and tasty Cucumber-Tomato Finger Sandwiches to be five-star dining. But, they would be perfect for a child’s tea party. They can be made with white and/or brown bread, butter or cream cheese. However you make them, they are sure to satisfy your little guests’ palates.  
 

1 cucumber
6 cherry tomatoes
6 slices white bread,
    trimmed of crusts
6 slices brown bread, 
    trimmed of crusts
1/2 brick cream cheese
    (or 1/2 stick butter)
Salt

      Peel the cucumber and slice very thinly. Sprinkle the slices lightly with salt. Thinly slice the cherry tomatoes. 
      Spread either butter or cream cheese onto one side of each of the white and brown bread slices. 
      Place a layer of cucumber, then a layer of tomatoes on either the prepared white or prepared brown bread slices. 
      Cover these half-sandwiches with the remaining bread slices. You should have six large sandwiches each made of 1 slice of white bread and 1 slice of brown bread. (You can use all white bread or all brown bread, but the two colors make the sandwiches more interesting looking). 
      Now, you can either cut the sandwiches diagonally to make 4 small triangle sandwiches, or you can cut them in half and then each half into 4 thin strips. Or you can use a cookie cutter and cut uniquely-shaped sandwiches and eat the remains as a cook’s treat. 

      No matter how you cut them, serve these tasty tea sandwiches with a cup of Stash’s Dragonwell Special Grade tea. It is China’s most famous green tea and is sweet and light. No surprise that it is named after a benevolent dragon in Chinese mythology.
