2 cups all purpose flour

After you light the first candle on the Menorah, say the blessings and sing Ma’oz Tzur, you will want to head directly to your tea buffet where you can have a plate of these sweetly satisfying Rugelach ready to devour. Filled with nuts, raisins and cinnamon, your sweet tooth will say "Mazel tov!" to being lucky enough to have these delicious pastries on hand to celebrate Hanukkah.
1/4 teaspoon salt
1 cup unsalted butter
8 oz. cream cheese
1/3 cup sour cream
1/2 cup white sugar
1-1/2 tablespoons cinnamon
1 cup walnuts, finely chopped
3/4 cup raisins
Preheat oven to 350E. While still cold, cut the butter and cream cheese into small pieces. In a food processor, pulse the flour, salt, butter, cream cheese and sour cream until crumbly.
Divide the crumbly mixture into four equal parts and shape each part into a disk. Wrap each disk and chill in the refrigerator for at least 2 hours or up to 2 days.
In a medium sized bowl, combine sugar, cinnamon, walnuts and raisins.
Take one disk at a time from the refrigerator and roll into a 9" round. Sprinkle the round with one quarter of the sugar/nut mixture. Press the mixture lightly into the dough.
With a knife or pizza cutter, cut each round into 12 wedges. Beginning at the wide end of the wedge, roll each wedge up from the wide end to the narrow end and bend slightly into a crescent shaped pastry with the point of the dough on the outside.
Repeat these same steps with the remaining 3 disks. Place the crescent pastries (Rugelach) on ungreased baking sheets and chill for 20 minutes before baking.
Bake the Rugelach for 22 minutes, until lightly golden in color. Remove from the oven and cool on wire racks. Store in airtight containers or freeze them in a container layered with waxed paper between each layer, and seal the container in a plastic resealable bag to keep out freezer odors and prevent freezer burn.
