                     "A Festival of Light Latkes"

      When the first light is lit on the first night of Hanukkah, you will want to start off your celebration in style. A lovely way would be to host a tea where you can serve your family and friends delicious Salmon Latkes. These "fried pancakes" pay homage to the oil that miraculously provided light for eight days. 

 

1 can salmon, skin and bones
   
removed, reserving juice
2 eggs
1/2 cup finely chopped onion
1/2 cup matzo meal
   
(or bread crumbs)
1 tablespoon freshly minced dill
Salt and pepper


      In a large bowl, mix together salmon with juice, eggs, onion, matzo meal and dill. Season to taste with salt and pepper. Let the mixture rest for 15 minutes to blend the flavors.
     To prepare the Latkes, wet your hands and take a small amount of mixture. Pat it into small round pancake shapes (flattened circles about 2"-3" in diameter).
     In a large skillet, pour in enough vegetable oil to cover the bottom about 1/8" deep. Fry the Latkes until golden brown on both sides.
     Remove the Latkes from the skillet and drain on paper towels.
     Makes about 24.

     In keeping with Jewish traditions, brew a pot of Harney & Sons Earl Grey Kosher Tea to serve with your Salmon Latkes. Your guests will sing out "Mazel Tov" with sheer joy!
