                            "Tropical Tartlets"


      For a summertime tea party, Tropical Citrus Tartlets are a refreshing addition to your tea table. Made with lemon and lime juice, these miniatures will carry your guests away on a "junglicious" adventure. 
 

3 eggs
3/4 cup sugar
1-1/2 teaspoons rum flavoring
1/4 cup fresh lime juice
1/4 cup fresh lemon juice
3 pkgs. mini prepared
    Phyllo cups (45 total)
Fresh raspberries (45 total)
Flaked coconut, for garnish

      In a heavy-bottom, small saucepan, whisk eggs, sugar, rum flavoring, lime and lemon juices. Cook over medium heat, whisking constantly, until boiling and mixture is thick, about 10 minutes. Mixture should register 160 degrees on candy thermometer.
       Strain this curd mixture into a bowl. Cover the surface with plastic wrap and refrigerate 2 hours or until chilled. You can make this curd a day ahead.
       Spoon 1-1/2 teaspoons of curd into each Phyllo cup. Top with a raspberry and pinch of coconut. Serve immediately or refrigerate up to 4 hours. Makes 45 tartlets.
