      Believe it or not, these cookies are actually good for you. They contain healthy ingredients like oats, almonds, fruit and bittersweet chocolate. And if you want to make an entirely different batch of cookies, simply change the filling or extracts to create a brand new treat.
 

1 cup whole almonds
1-1/2 cups whole-wheat
    pastry flour
1/2 cup oat flour
2 teaspoons baking powder
1/4 teaspoon salt
1/3 cup canola oil
1/3 cup maple syrup
1/4 cup apple juice
1 teaspoon almond extract
1 teaspoon vanilla extract
1/2 cup bittersweet chocolate chips
2 tablespoons raspberry preserves

      Preheat oven to 350°. Line a baking sheet with parchment paper. 
      Divide the almonds in half and process each in a blender until finely ground. 
      Transfer to a large bowl and add the whole-wheat flour, oat flour, baking powder and salt. 
      Whisk oil, maple syrup, apple juice, almond and vanilla extracts in a medium bowl. 
      Add the wet ingredients to the dry and stir to combine. 
      Knead the dough together. If the mixture is too crumbly, add 1 to 2 tablespoons more of apple juice. 
      Using a level tablespoonful of dough, form it into balls and place on the prepared baking sheet about 2" apart. Flatten each ball into a disk and make a small indentation in the center using your thumb or the back of a small spoon. 
      Place chocolate chips in each indentation, then cover with 1/4 teaspoon of the preserves. 
      Bake the cookies for 15 to 17 minutes, one batch at a time, until golden around the edges. Cool on a wire rack. Makes 2 dozen.
