                               "It's Trufflicious"


      Once you start popping these decadent truffles in your mouth, you won't want to stop.  Rich in chocolate and peanut butter, an unbeatable combination, they will make your guests’ mouths water as well. And the fun part is that there are many different toppings to roll them in to make them that much more special. 
 

8 squares (1 pkg.) semi-sweet
   baking chocolate
1/2 cup peanut butter
8 oz. (1 tub) whipped topping,
    thawed
1/3 cup powdered sugar

      In a microwave, heat the chocolate squares in a large bowl on high for approximately 2 minutes until melted, stirring after 1 minute. (This can also be done in a double boiler on the stove top.) 
      Stir in the peanut butter until well blended. Cool to room temperature. Gently stir in the whipped topping. Refrigerate for 1 hour. 
      Using a melon baller or teaspoon, scoop out the mixture and shape into 1" balls. Roll in the powdered sugar and refrigerate. Makes 3 dozen. 
      Optional coatings: Finely chopped toasted pecans, finely chopped peanuts, cocoa powder, flaked coconut, or grated semi-sweet or white baking chocolate. 

       If you can stop eating these truffles long enough to brew a pot of tea, a nice selection would be a cup of Adagio’s Assam, a rich black tea that complements chocolate beautifully.  So sit down, put your feet up, and have a plate of these truffles nearby with your cup of tea and you will think you've gone to Afternoon Tea heaven!
