                   "The Fruits of Your Labor"

      With summer comes an abundance of fresh fruits to enjoy with a cup of tea. So why not share the harvest and invite friends over to indulge in an Afternoon Tea table laden with Waldorf Salad Tea Sandwiches. They’re refreshing, tasty and good for the heart and soul. 
 

1/2 cup grated Red Delicious
     apple
1/2 cup grated green apple
1/3 cup pecans, chopped
1/2 cup red seedless grapes,
    chopped
1/4 cup minced celery
1 banana, chopped
1 tablespoon lemon juice
1/2 cup heavy cream
3 tablespoons mayonnaise
6 slices bread (white or wheat)

Garnish:
Fresh mint leaves


     Combine the apples, pecans, grapes, celery and banana in a large bowl. Pour in the lemon juice and toss to coat the fruit.
     In a medium bowl, beat the heavy cream and mayonnaise at medium speed until combined.
     Pour the cream mixture over the fruit mixture and mix well.
     Cut the crusts off of the bread slices. Cut each slice into 4 smaller squares or triangles. Top each slice of bread with a dollop of the fruit mixture. Garnish with a fresh mint leaf if desired. 



     These lovely tea sandwiches would be perfectly complemented with a cup of Elmwood Inn’s Tropical Blend tea, made from Nilgiri black tea combined with South Sea fruit flavors. So bring out the fruit baskets, whip up a plate or two of
