                  "Cool as a Summer's Breeze"

      For a novel twist on a typical Afternoon Tea party, take your guests outdoors this summer, sit under a shady tree, and serve this lovely Yellow Squash Cake along with your other sweet and savory treats. Prepared with one of summer’s abundant crops, you will see the specks of yellow from the Squash’s rind as you bite into this surprisingly sweet treat.

 

2 cups yellow squash, grated
    
with rind
1/2 teaspoon salt
3/4 cup granulated sugar
     (Splenda can be substituted)

3 large eggs, warmed to
     room
temperature
7/8 cups vegetable oil
3/4 cup honey
    
(Orange Blossom honey is
    
a nice flavor)
2 lemons, juiced and grated
2-1/2 cups flour
2 teaspoons baking soda
1/2 teaspoons baking powder
2 cups chopped pecans or
     almonds
Confectioners’ sugar


     One hour ahead of time, cut up and grate the yellow squash, leaving the rind on the flesh. Put the squash in a colander and toss with the salt. Place a heavy bowl over the squash to press down on the gratings, and let drain for 1 hour.
     Preheat oven to 350 degrees. Grease a 10" round bundt pan.
     In the large bowl of an electric mixer, add the sugar, eggs, oil, honey, lemon juice and rind, and beat until blended.
    
In a separate bowl, sift together the flour, baking soda and baking powder. Add the dry mixture to the wet ingredients, and beat until there is a smooth batter.
    
Squeeze out any remaining water from the squash, and stir the squash and nuts into the batter.
    
Pour the batter into the prepared bundt pan. Bake for 35-40 minutes until lightly browned and a cake tester inserted into the cake comes out clean. Remove the cake from the oven and cool on a wire rack for 10 minutes. Invert the cake onto the rack to cool completely. Transfer the cake to a serving plate and dust with Confectioners’ sugar.
